Mediterranean Flatbread Tacos
The highlight of my day lately has been the small amount of sunshine I receive by either grilling outside on the BBQ or taking out the trash. Isn't it funny how your perspective changes when you're forced to stay inside? A task that used to be monotonous and tiresome now serves as a moment of sanity.
I have sprouted such gratitude as a result of this COVID-19 pandemic. I am thankful for the things as simple as the ability to work, feed myself & have a roof over my head.

Disclaimer: I am currently living off of an Instant Pot, toaster oven & microwave which ultimately leads to having to improvise here and there.
RECIPE:
feeds 4 people | approx 30 - 35 min
ingredients:
- 2 lbs. pre-marinated boneless skinless pollo asado
- 1 pack of lavash or pita bread
- 1/4 diced red onion
- 10 chopped marzano tomatoes
- 1/2 diced cucumber
- 1/2 red bell pepper diced
- 4 green onion thinly sliced
- Trader Joe's 3 layer hummus
- feta cheese
- fresh cracked pepper
instructions:
- grill the pollo asado on high for approximately 15 - 20 minutes (flipping halfway). set the grilled chicken aside to rest.
- dice the red onion, red bell pepper, cucumber, then chop the tomatoes, and thinly slice the green onion
- toast the lavash/pita bread until warm
- cut the grilled chicken into 1 inch cubes
- take a tbsp full of hummus and drag that across the base of the taco
- add some grilled chicken, cucumber, tomato, bell pepper, red onion & feta cheese
- garnish with green onion
- top with fresh cracked pepper
These tacos hit the spot. They're perfect for the days where you really don't want to do the dishes. This Meal = Minimal Effort = Amazing Results
